This September (4–5.9), something special will take place in Emo’s kitchen. We are honoured to welcome Tor Birk Rasmussen from Bergen, representing the two Michelin-starred restaurant Gaptrast.

We are connected by an idea that has been part of Emo’s story from the very beginning – a love for nature, pure flavours and Nordic ingredients, allowing them to take the leading role on the plate.

The world of Gaptrast is born from Norway’s fjords, the sea and the forests. In Rasmussen’s hands, these elements become cuisine where open fire meets sensitivity, and precise craftsmanship brings out the flavours created by nature itself.

His journey has taken him from Statholdergården in Oslo to the Michelin-starred Stallen and Copenhagen’s Alchemist, before a longing for Norwegian nature brought him back to Bergen to build the story of Gaptrast.

For two evenings, we bring together Emo’s and Gaptrast’s interpretations of Nordic cuisine. On the plates, the Norwegian coastline meets the Finnish soul – snow crab, halibut, scallops, flavours from the forests and the finest ingredients of late summer.

This is not just a guest visit.
This is a meeting of two restaurants that share the same way of thinking.
